Thai-Inspired Napa and Kohlrabi Slaw
- 1 kohlrabi, peeled and chopped into matchsticks
- 1 head napa cabbage, thinly chopped
- 1 bunch radishes, thinly sliced into rounds
Dressing:
- 2 Tbs. rice vinegar
- 3 Tbs. soy sauce
- juice of 1 lemon or lime
- 1/4 cup olive oil
- 1 garlic clove
- 1 Tbs. fresh ginger, minced
- 1 Tbs. honey or maple syrup
- salt and pepper
Combine kohlrabi, napa and radishes in a large bowl. Whisk together dressing and toss to coat. Feel free to add shredded carrot, thinly sliced sweet pepper, or whatever else you have on hand.
Optional additions: chopped peanuts, cilantro or fresh mint, scallions, or diced hot pepper.
